Work backward from fulfillment
A useful production schedule starts with the pickup or delivery date and works backward. Instead of asking “What should I bake today?” you should be able to see which customer commitments are driving today's work.
Group similar production tasks
Begin by listing every confirmed order due during the production window. Note quantities, components, decoration complexity and fulfillment times. Then group similar work. If several orders use the same cake flavor, cookie dough or frosting, batching those tasks can reduce setup and cleanup.
Identify advance-prep items
Separate items that can safely be prepared ahead from work that needs to happen close to fulfillment. Baking, chilling, filling, decorating and packaging may each belong on different days depending on the product. Protect time for final details rather than filling the entire schedule with baking tasks.
Protect decorating and packaging time
A production plan should also show capacity. If the week is already full, seeing that early gives you time to stop accepting orders, adjust pickup windows or decline rush work instead of discovering the problem the night before.
