Cost the recipe
Food cost starts with the full recipe, not just the ingredients that feel expensive. Add the cost of flour, sugar, eggs, butter or oil, flavoring, fillings, frosting and every other ingredient used in the batch.
Include fillings and decorations
Decorations can materially change the cost of a custom product. Fondant, edible images, specialty chocolate, toppers and premium colors should not disappear into a generic estimate. The same applies to boxes, boards and other packaging if you use product cost as part of pricing.
Account for waste
Allow for normal waste where it is meaningful. Trimmed cake, broken cookies, test pieces and unusable decoration all consume ingredients. Then divide the total batch cost by the number of sellable units the recipe reliably produces.
Calculate per sellable unit
Food cost is not the final selling price. Labor, overhead and profit still need to be considered. Its value is giving you a reliable foundation instead of pricing from intuition alone.
